Matcha, Mint & White Chocolate Tarts

Ingredients
Pastry
110 g butter
100 g sugar
1 egg+ 1 extra egg yolk
225 g flour
25 g cocoa
Filling
1 Tbsp matcha green tea powder
1⁄3 C (80 ml) cream
225 g white chocolate
Matcha Chocolate Drops
100 g white chocolate
2 tsp (10 ml) matcha green tea powder
Method
Preheat the oven to 160 °C.
Pastry
Combine the butter and sugar in a blender and while the motor is still running, add the whole egg and the yolk. Add the flour and cocoa and blend into a dough. Wrap the pastry in clingwrap and refrigerate for 30 minutes.
Press the pastry into 24 small tart shells. Bake blind in the oven for 8-9 minutes, no need for baking paper and baking beans. Allow the tart shells to cool completely.
Filling
Mix the matcha into the cream. Place the white chocolate and cream mixture in the top of a double boiler and heat until the chocolate has melted. Strain the mixture and pour into the prepared tart shells. Allow the tarts to set.
Matcha Chocolate Drops
Melt the chocolate in a microwave in a glass or ceramic bowl on the defrost setting. Stir in the matcha and mix well.
Pour the chocolate into a piping bag with a 2 mm round nozzle and pipe 1 cm drops onto a sheet of baking paper. Allow the chocolate to set and and then place three drops on the top of each tart.
