Lush potato salad

A potato salad with a delicious twist!

  • 500 g baby potatoes
  • 1 bunch spring onions, finely sliced
  • 1 C (250 ml) frozen petit pois (baby peas), soaked in cold water
  • 1 C (250 ml) plain yoghurt
  • 5 tsp (25 ml) olive oil
  • zest and juice of 1 lemon
  • 2 sprigs dill, chopped
  • 2 sprigs mint, chopped
  • salt and pepper
  • 100 g watercress leaves
  • 100 g smoked salmon or trout

Boil the potatoes (skins on) until tender but not mushy, about 20 minutes). Allow to cool.

Gently combine the cooled potatoes with the spring onions, peas, yoghurt, oil, lemon juice, zest and herbs. Season well.

Serve on a bed of watercress and top with pieces of torn smoked salmon.

Suggestion:

Use hot or cold smoked salmon or trout
