
Lush potato salad
A potato salad with a delicious twist!

Method
Boil the potatoes (skins on) until tender but not mushy, about 20 minutes). Allow to cool.
Gently combine the cooled potatoes with the spring onions, peas, yoghurt, oil, lemon juice, zest and herbs. Season well.
Serve on a bed of watercress and top with pieces of torn smoked salmon.
Suggestion:
Use hot or cold smoked salmon or trout
