Lemon and Sage Flat-Roast Chicken
A mouth-watering roast perfect for any night of the week!

1 large free-range chicken, back bone cut out with kitchen scissors
50 g softened butter
juice and zest of 1 lemon
4 finely chopped sage leaves
4 fat cloves garlic, crushed
8 sage leaves
salt and pepper
Preheat the oven to 180 ˚C (convection oven) or 190 ˚C (conventional oven).
Carefully loosen the skin of the chicken. Combine the stuffing ingredients and rub generously under the skin. Place the whole sage leaves under the skin as well.
Place the flat chicken onto a roasting rack, rub with a little olive oil and season well with salt and pepper.
Roast for 1 hour. Allow to rest for 10 minutes before carving.
Delicious with honey-roasted carrots, garlic butter baby potatoes and zesty green beans.
