Lebanese Potato Salad

Potato salad is always a hit and this Lebanese style salad is the perfect recipe!

  • 3 large potatoes, peeled and cut into 2 cm cubes
  • ¼ C (60 ml) lemon juice
  • 3 Tbsp (45 ml) extra-virgin olive oil
  • ½ tsp (2.5 ml) salt
  • freshly milled black pepper, to taste
  • 4 spring onions, thinly sliced
  • ¼ C (60 ml) chopped fresh mint

Steam the potato cubes for 20–25 minutes, or until just tender. Set aside and allow to cool for 20 minutes.

In a separate large bowl, whisk the lemon juice, oil, salt and pepper together. Add the potatoes and toss to coat.

Just before serving, add the spring onions and mint to the salad and toss gently.

Tip

Prepare the dressing, cover and refrigerate for up to 2 days.
