Lamb Chops & Pomegranate Relish
Lamb chops grilled to perfection and served with a Mediterranean inspired pomegranate relish. The perfect accompaniment to cut through the richness of the lamb.

½ C pomegranate seeds
¼ C olives, chopped
¼ C feta, crumbled
¼ C plus 2 Tbsp olive oil
2 Tbsp flat leaf parsley, chopped
1 Tbsp coriander, chopped
Maldon salt and freshly ground black pepper
8 lamb chops
2 tsps fennel seeds, crushed
Preheat a grill pan over medium heat.
Mix the pomegranate seeds, olives, feta, ¼ cup oil, coriander and the parsley together in a bowl. Season with salt and pepper.
Rub the lamb chops with the remaining 2 tablespoons of olive oil, followed by the fennel. Season with salt and pepper and grill to desired doneness. Serve with relish.
