
Turkish Kisir Salad

Ingredients
1 C (250 ml) bulgur wheat
1 (11 g) sachet of instant red pepper or tomato soup
1 (120 g) red pepper, deseeded and diced
1 (120 g) green pepper, deseeded and diced
½ (240 g) cucumber, deseeded and diced
2 spring onions, finely sliced
125 g cocktail tomatoes, sliced
1 C (250 ml) fresh Italian parsley leaves
½ C (125 ml) fresh mint leaves
1 tsp (5 ml) dried chilli flakes
3 Tbsp (45 ml) fresh lemon juice
3 Tbsp (45 ml) olive oil
Method
Place the bulgur wheat and water into a saucepan and bring to the boil. Cook for 8 minutes. Stir in the soup powder and cook for another two minutes. Remove from the heat and place in a serving dish. Allow to cool. Once cooled, use a fork to fluff up and loosen the grains.
Stir in the remaining ingredients and season to taste. Place in the fridge for 30 minutes to allow the flavours to develop before serving.
Best served with chicken, lamb or fish kebabs and toasted pita on the side.
