Apple Crumble

A much loved classic for a reason - apple filling topped with a perfectly short and buttery crumble. Served warm with vanilla bean ice cream.

Crumble 

1 ½ C (375 ml) cake flour
½ C (125 ml) brown sugar
½ C (125 ml) quick cook oats
100 g pecan nuts, chopped
1 tsp (5 ml) cinnamon
¼ tsp (1,25 ml) salt
200 g butter, cubed

Filling

8 JAZZ™ apples, peeled and cut into chunks
1 Tbsp (15 ml) flour for dusting apples
¼ C (60 ml) sugar
¼ C (60 ml) honey
1 tsp (5 ml) vanilla essence
½ tsp (2,5 ml) ground cinnamon
½ tsp (2,5 ml) ground ginger
juice and zest of 1 lemon
½ C (125 ml) water

To Serve

Crumble

Add all of the ingredients, except the butter into a large bowl and mix. Add the butter and use your fingers (or the paddle attachment on a stand mixer) to rub in until the mixture resembles sand. Compact the mixture into a ball, then wrap it in cling film and put it in the fridge for at least 30 minutes to firm up.

Filling

Preheat the oven to 180 ºC.

Put all of the ingredients, except for the water, into a large bowl and toss to combine. Set a medium-size pot over medium heat then add the apple mixture. Cook for 1 minute while stirring, then add the water and mix to combine. Continue cooking for another 5 minutes then remove from the heat and pour the apple mixture into a baking dish.

Remove crumble from the fridge and break the ball apart and crumble it evenly over the top of the apple mixture (you can also grate over if the ball is firm enough).

Place it in the oven and bake for 30 minutes. After 30 minutes, turn on the grill and grill for an additional 5 minutes until golden but keep an eye on it.

Serve warm with scoops of vanilla ice cream.
