Irish Coffee shots with Vanilla Bean Cream

½ C (125 ml) cream, chilled

½ tsp (2.5 ml) Nielsen-Massey Madagascar Bourbon Vanilla bean paste

1 tsp (5 ml) icing sugar, sifted

4 Nespresso Capsules (or shots of espresso)

2 tsp (10 ml) brown sugar

2 Tbsp (30 ml) Kuhlua liqueur

4 Tbsp (60 ml) whiskey

pinch of ground nutmeg

chocolate shavings, for garnish

Place the chilled cream and vanilla paste into a glass bowl and whip until soft peaks form. Stir in the icing sugar and set aside.

To prepare one Irish coffee shot make one shot of espresso and pour into a tall sherry glass.

Add ½ tsp brown sugar, ½ Tbsp Kuhlua and 1 Tbsp whiskey and stir to dissolve.

Float the whipped vanilla cream on top and sprinkle with a pinch of fresh nutmeg and a few chocolate shavings and serve immediately.
