Instant Pot Apple Pie Steel Cut Oats

Quick, healthy and easy apple pie inspired steel cut oats, topped with crushed mixed nuts, fresh apple and cinnamon.

4 cups (1 l) water
1 cup (250 ml) almond milk (can also use cow’s milk for a dairy option, or substitute with soy/rice milk)
2 cups (500 ml) steel-cut oats
2 apples, peeled and cut into small chunks or grated
½  tsp (2,5 ml) salt
1 tsp (5 ml) ground nutmeg
1 tsp (5 ml) ground cinnamon
1 tsp (5 ml) ground mixed spice
2 Tbsp (30 ml) raw honey (for a vegan alternative, use brown sugar, coconut sugar or maple syrup)

To Serve

A small handful of mixed nuts or nut butter
A sprinkle of cinnamon and freshly sliced apple for garnish.

Place the water, milk and oats in the inner pot of the Instant Pot. Stir in the chunks of apple (they must be peeled), salt, spices and sweetener of choice.

Secure the lid and turn the vent up to sealed position. Select PORRIDGE Pre Set and change the time to 10 mins on High Pressure – it will start automatically.

If you would like to prepare this the night before and have it ready when you wake up, select Delay Start and choose the number of hours. Factor in the full amount of time, including the Natural Pressure Release (+/- 20 mins).

Once cooking time is up, allow NPR (Natural Pressure Release) and wait for valve to drop. Open lid and stir.

Serve with crushed mixed nuts, or nut butter,  a dash of cinnamon, honey and top with some freshly sliced apples.
