Gypsy Ham and Cheddar with Pineapple-and-Chilli Relish


An easy-to-make snack, perfect for when entertaining guests before dinner!

  • 2 C (500 ml) sugar
  • 3/5 C (150 ml) vinegar
  • 1 large pineapple, chopped
  • 2 chillies, sliced and seeded
  • 250 g gypsy ham, sliced
  • 250 g well-matured Cheddar, sliced

To make the pineapple-and-chilli relish, place the sugar and vinegar in a saucepan and bring to the boil, stirring all the time to dissolve the sugar. Add the pineapple and chillies and simmer slowly for about 1 hour, until the relish becomes thick and sticky. Bottle in a jam jar while hot, and seal.

Place a slice of Gypsy ham, slices of mature Cheddar and a dollop of relish on your fresh bread. A Hawaiian sandwich at its best …. Cold Weiss beer will wash this one down well.
