Gruyere & Thyme Crackers with Goats Cheese & Caramelised Onions

These crackers are so tasty that it’s really hard to believe that they are wheat-free. Carb and non-carb eaters will love this tasty canapé.

Crackers
½ C (125 ml / 65 g) almond flour
¼ C (60 ml / 32 g) coconut flour
¼ C (60 ml / 35 g) sesame seeds
½ tsp (2.5 ml) fine salt
1 tsp (5 ml) garlic, crushed
2 tsp (10 ml) fresh thyme leaves, finely chopped
1 ½ Tbsp (22.5 ml) olive oil
1 large egg
⅓ C (80 ml / 35 g) Gruyere cheese, grated

Caramelised Onions
1 Tbsp (15 ml) olive oil
1 (180 g) large onion, thinly sliced

To Assemble
200 g goats cheese (logs)
handful of micro leaves

Crackers

Pre heat the oven to 160 °C.

Line a baking tray with baking paper.

Place all of the ingredients into a food processor and blend for a few seconds until the mixture forms a dough.

Roll the dough out between two sheets of baking paper to a thickness of roughly 0.5 cm. Remove the top piece of baking paper and use a cutter (6 cm diameter) to cut out 15 rounds. Lift the rounds onto the prepared baking tray and place in the oven.

Bake for 12-15 minutes until golden. Allow the crackers to cool for 5 minutes on the baking tray before placing onto a cooling rack to cool completely.

Caramelised Onions
Place the oil and the chopped onion in a heavy-based frying pan over low heat. Stir regularly and allow to cook for 30 minutes until golden and tender.

To Assemble
Slice the goats cheese logs into rounds. Place a round onto each cracker, add some of the caramelised onion and garnish with the micro leaves.

TIP: The Gruyere cheese can be replaced with mature cheddar or Parmesan for alternative flavours. Chopped rosemary or origanum will also work instead of thyme.
