Grilled Courgette, Mint and Burrata Salad
A delightful salad, perfect to go with almost any meal!

250 g courgettes (baby marrows), washed and shaved into thin ribbons (use a vegetable peeler)
olive oil, for coating
salt and freshly milled black pepper
125 g burrata cheese, torn
1 red chilli, seeded and thinly sliced
1/3 punnet (10 g) fresh mint, washed
Preheat a grill pan until hot.
Place the courgette ribbons in a bowl and drizzle with a little olive oil to coat. Season with salt and freshly milled pepper. Grill the courgettes in the pan until lightly charred on both sides. Arrange the grilled courgettes and burrata neatly on a platter and sprinkle with chopped chilli and mint leaves.
Season with extra black pepper and a good squeeze of lemon juice and serve immediately.
