Green Apple, Parmesan and Date Salad


A crisp salad, with the sweet flavours of apple, date and maple syrup.

Warm Date and Maple Syrup Dressing

10 dates, pitted
2 Tbsp (30 ml) water
3 Tbsp  (45 ml) apple cider vinegar
½ C (125 ml) sunflower oil
pinch of salt
1 Tbsp (15 ml) maple syrup
1 Tbsp (15 ml) water


3 iceberg lettuce heads, cut in half
3 baby fennel bulbs, cut in half lengthways
2 celery sticks, sliced into thin ribbons (use a vegetable peeler)
3 baby spring onions, cut into fine strips
3 Granny Smith apples, cut into rounds
100 g Parmesan cheese, cut into thin slices
12 mint leaves

For the dressing, place the dates and water in a small pot over a medium heat. Cook gently until the water has been absorbed and the dates have softened.

Place the softened dates and the rest of the dressing ingredients in a food processor. Process until smooth.

To Assemble

Combine all the salad ingredients together on a platter or in a serving dish.

Reheat the dressing gently until warm and then drizzle over the salad.
