
Ginger Beer BBQ Sauce
Can be used as a dipping sauce for chicken kebabs or as a glaze over spareribs or pulled pork.

Ingredients
2 tsp (10ml) olive oil
½ onion, finely chopped
2 cloves of garlic, crushed
3 Tbsp (45ml) fresh ginger, finely chopped
¼ cup (60ml) brown sugar
¼ cup (60ml) orange juice
2 cups (500ml) ginger beer
½ cup (125ml) tomato sauce/ketchup
Few drops of Worcestershire sauce
Freshly ground black pepper
1 tsp (5ml) apple cider vinegar
Method
Heat olive oil in a saucepan and gently sauté onions, garlic and ginger until translucent and fragrant.
Add brown sugar and allow to caramelise until golden brown and sticky.
De-glaze the pan with the orange juice and then add the ginger beer and tomato sauce.
Allow to cook over a moderate heat and reduce for about 15 minutes or until sauce has thickened to the desired consistency.
Season with a few drops of Worcestershire sauce, a good grinding of black pepper and vinegar.
Taste and adjust seasoning if needed.
Serving suggestion: Use as a glaze over chicken wings and roast in oven for 30 minutes or until chicken is cooked through, golden brown and sticky. Can be used as a dipping sauce for chicken kebabs, or as a glaze over spareribs or pulled pork.
