Ingredients
Jellies
1 packet lime jelly
half a thumb-sized piece of ginger
1 large shaving of lemon peel
2 Tbsp lemon juice
Gin and Tonic
1 part your favourite gin
tonic
stick of lemongrass
jellies
ice
Method
Heat 2 cups of water in a small saucepan, add the lemongrass, ginger and lemon peel. Bring to the boil, boil for 10 minutes and turn off. Allow to infuse for 15 minutes. Strain.
Add the jelly powder to a bowl and dissolve in 400 ml of the hot, infused water. Add lemon juice to taste.
Pour into an ice tray. Allow to set.
Gin and Tonic
Place 4 jellies and ice cubes in a tumbler, add gin and top up with tonic. Garnish with a lemon wedge and a stick of lemongrass. Use the lemongrass to fish out the jellies in between sips.
