
Garlic Prawns on Lemon and Herb Orzo

Ingredients
Lemon and herb orzo
1 C (250 ml) orzo or rosmarino pasta
2 Tbsp (30 ml) extra virgin olive oil
juice and zest of 1 medium lemon
1 C (250 ml) roughly chopped combination of dill, coriander, mint and chives
salt and pepper
Garlic prawns
3 Tbsp (45 ml) butter
2 fat cloves garlic, crushed
2 C (500 ml) shelled and deveined prawn tails, thawed
3 Tbsp (45 ml) chopped flat-leaf parsley
salt and pepper
Method
Lemon and herb orzo
Bring a pot of water to the boil, salt well and add the orzo. Boil uncovered until al dente – it cooks very quickly. Drain and then place back into the pot. Add the olive oil, lemon juice, zest and herbs. Season well and keep to one side.
Garlic prawns
Melt the butter with the garlic in a frying pan until nutty brown and fragrant. Add the prawns and fry until bright pink and glossy. Add the parsley and season lightly.
Serve the orzo on a medium serving dish or on individual plates and top with the garlic prawns. Enjoy with a crisp garden salad.
