
Vegetable Fritti
This dish would make anyone love vegetables! Simply delicious.

Ingredients
Batter
1/4 C (60 ml) cornflour
1 C (250 ml) flour
pinch of salt
1/2 tsp (2.5 ml) bicarbonate of soda
1 C (250 ml) beer, chilled
Vegetables
4 C (1 L) sunflower oil for deep-frying
100 g courgettes, thinly sliced into long strips
100 g mangetout
50 g green beans
50 g baby corn, sliced in half lengthways
salt and milled black pepper
lemon wedges for serving
Method
Batter
Place the cornflour, flour, salt and bicarbonate of soda into a bowl and mix to combine. Add the beer and mix until a relatively smooth batter is formed. A few lumps are good.
Vegetables
Heat the oil in a heavy-based pot until relatively hot. Dip one vegetable at a time into the batter and deep-fry for 1–2 minutes until golden brown and crispy. Remove from the oil using a slotted spoon and place on paper towels to drain any excess oil. Season with salt and pepper.
Serve immediately with fresh lemon wedges.
