Fried Mozzarella Sandwiches


Grilled cheese sandwiches are an all-time favourite and this recipe just made them even better!

8 slices white bread
2 Tbsp (30 ml) olive oil
2 fresh mozzarella balls, sliced thickly
12 anchovy fillets
freshly ground black pepper
2 eggs
a splash of water
1 ½  cups  (180 g) breadcrumbs
2 tsp (10 ml) dried oregano
vegetable oil for deep frying
balsamic cream
rocket leaves to serve

Lay the slices of bread out on a board. Brush all of the slices with olive oil.

Layer half of the slices with thick slices of mozzarella cheese and 3 anchovy fillets each. Season with black pepper.

Whisk the egg well with a splash of water.

Combine the breadcrumbs and oregano.

Dip the sandwich into the egg mixture and then press into the seasoned breadcrumbs.

Refrigerate for 30 minutes.

Heat the vegetable oil in a deep fryer or heavy bottomed pan. Fry one or two sandwiches at a time until golden and crispy on both sides. Drain the excess oil on a paper towel before serving with fresh rocket leaves and balsamic cream.
