Fried Bananas Smothered in a Ginger-Caramel Sauce

4 tbsp breadcrumbs
7 tbsp chopped almonds
4–6 ripe bananas (not too ripe)
a little grape seed oil and butter for frying
2 Tbsp (30 ml) butter
140 g 380ml or ¾ cup white sugar
1 Tbsp (15 ml) rum
3 tbsp grated ginger
4/5 C (200 ml) coconut milk
Mix the breadcrumbs and chopped almonds. Beat the egg and dip the bananas into it. Now coat the bananas in the almond and breadcrumb mixture. Keep to one side for about 20 minutes while you prepare the sauce.
To make the caramel sauce, melt the butter and sugar in a saucepan. Allow it to caramelise slowly – it will go brown and hard, but will melt into the fluids when they are added. Add the rum, grated ginger and coconut milk. Bring to the boil, stirring until the mixture is slightly thickened. Set aside until you are ready to serve. This sauce is served warm.
Fry the bananas in a mixture of oil and butter until golden brown and serve them hot on a crumpet or on their own, smothered in the sauce and topped with a scoop of vanilla ice cream (optional).
