French Toast with Caramelised Bananas and Toasted Macadamia Nuts

Ingredients
Caramelised Bananas
1 Tbsp (15 ml) Unsalted butter
4 bananas, peeled and thickly sliced into rounds
3 Tbsp (45 ml) Nomu Sweet Rub
1 Tbsp (15 ml) orange liqueur (optional)
Hot Chocolate and Cinnamon Sauce
½ C (125 ml) NEW NOMU HOT CHOCOLATE (Just Add Water)
½ C (125 ml) cream
1 tsp (5 ml) ground cinnamon
French Toast
1 Tbsp (15 ml) NEW NOMU HOT CHOCOLATE (Just Add Water)
3 eggs
4 croissants, halved
extra butter for frying
50 g macadamia nuts, toasted and chopped
2 bananas, halved lengthways, skin on for garnish (optional)
Method
Caramelised Bananas
Heat a little butter in a frying pan and add the sliced bananas.
Sprinkle over the NOMU Sweet Rub and cook for about a minute or until the sugar has caramelised slightly and the bananas have become sticky.
Add the orange liqueur and remove the slices from the pan. If using banana halves for garnish, add to the frying pan and allow to caramelise; once cooked remove and set aside.
Hot Chocolate and Cinnamon Sauce
Place all of the ingredients into a saucepan and whisk until smooth.
Bring to a simmer and continue to whisk for a few minutes until thickened slightly.
French Toast
Whisk the New NOMU Hot Chocolate (Just Add Water) into the eggs until lightly beaten.
Heat a frying pan with a little butter until just starting to foam.
Dip the croissant halves into the egg mixture and fry for about 3-4 minutes on each side or until lightly golden in colour.
Serve immediately with caramelised banana, macadamia nuts and lashings of hot chocolate and cinnamon sauce.
Garnish with a caramelised banana slice for a special touch.
