Flatbreads with Garlic Mushrooms, Parmesan & Rocket

100 g butter
2 fat cloves garlic, crushed
250 g brown mushrooms, thinly sliced
Salt and pepper
500 g readymade bread dough (get at your nearest bakery)
Handful of finely chopped chives
100 g wild rocket
Parmesan shavings
Parmesan-infused olive oil

Preheat the oven to 240 °C. Grease a baking tray.

Heat the butter and garlic until bubbling, and then fry the mushrooms in batches to give them good colour. Set aside and season to taste.

Divide the dough into 4–6 balls, and then flatten and stretch out onto the prepared baking tray. Prick with a fork and bake for 8–10 minutes until slightly golden and crisp around the edges.

Top each flatbread with a generous amount of garlic mushrooms. Sprinkle with chives, rocket and Parmesan shavings and drizzle with Parmesan-infused olive oil.

Serve as is or enjoy with a charcuterie board.
