Fire-baked Dukkah Oysters with Herb Butter

Avoid the hassle of shucking and simply put the oysters straight onto the grill. They’ll poach in their own juices and pop right open when they’re ready.

Butter

125 g butter, melted

1 Tbsp (15 ml) spring onion, finely chopped

1 Tbsp (15 ml) chives, finely chopped

1 Tbsp (15 ml) flat leaf parsley, finely chopped

1 Tbsp (15 ml) green Tabasco™

1 tsp (5 ml) lemon zest

Oysters

12 oysters

2 Tbsp (30 ml)  NoMU Egyptian Dukkah

NoMU smoked salt and pepper to taste

Melt the butter in a small saucepan, then chuck in the rest of the ingredients and give it a stir.

Pop the oysters on the grid and wait for the pop. Take them off the grill and remove the lids. Spoon in some herb butter, add a little smoked salt and pepper, sprinkle on some dukkah and that’s that.

Simple and delicious, just the way we like it.
