
Festive Ice cream
This ice cream is a great way to incorporate festive flavours in a light, cool dessert. Perfect for a summer celebration.

Ingredients
Festive Ice Cream
2 C (500 ml) good quality vanilla ice cream
2 Christmas mince pies, crumbled
½ tsp (2.5 ml) ground cinnamon
pinch of nutmeg
1 Tbsp (15 ml) Kahlua (or any liqueur of your choice)
8 glacé cherries, halved (plus extra for garnish)
50 g flaked almonds, toasted
To serve
mint for garnish
Method
Festive Ice Cream
Allow the ice cream to soften enough to mix easily. Fold in all of the remaining ingredients.
Pour into a small terrine mould or loaf tin lined with baking paper, or into individually lined moulds. Freeze overnight.
The next day, place a plate over the top of the mould or loaf tin and invert to release the mould. Remove the baking paper.
Slice the terrine and serve garnished with fresh mint and extra glace cherries.
