Edamame Beans with Ponzu Dressing
A great little healthy snack that takes only minutes to prepare.

Ingredients
Beans
pink Himalayan rock salt
Ponzu Dressing
juice of 1 lime
a pinch of brown sugar
a dash of rice vinegar
a dash of mirin*
Method

In a saucepan of boiling water, cook the edamame beans until tender – this should take about 3-5 minutes.
Ponzu Dressing
Combine all of the ingredients in a mixing bowl and whisk until well combined. Taste, and adjust seasoning if need be.
Once the edamame beans are cooked, remove from the pot and pile onto a serving platter. Season liberally with the pink Himalayan rock salt and drizzle with a little Ponzu dressing, or alternatively serve the dressing on the side.
