Edamame Beans with Ponzu Dressing

400 g edamame beans
pink Himalayan rock salt

Ponzu Dressing
2 Tbsp (30 ml) Soy sauce
juice of 1 lime
a pinch of brown sugar
a dash of rice vinegar

a dash of mirin*

In a saucepan of boiling water, cook the edamame beans until tender – this should take about 3-5 minutes.

Ponzu Dressing
Combine all of the ingredients in a mixing bowl and whisk until well combined. Taste, and adjust seasoning if need be.

Once the edamame beans are cooked, remove from the pot and pile onto a serving platter. Season liberally with the pink Himalayan rock salt and drizzle with a little Ponzu dressing, or alternatively serve the dressing on the side.

Mirin is a condiment used in Asian cooking. It is a rice wine which is similar to sake but with a lower alcohol content.
