Easy Wholewheat Prosciutto and Cheese Pizzas


Wraps masquerading as pizzas? These wholewheat prosciutto and cheese pizzas are quick and easy to make

  • 8 wholewheat tortilla wraps
  • 500 g mozzarella cheese, grated
  • 1 x 410 g can chopped tomatoes (I used chopped tomatoes with basil, garlic and oregano)
  • 12 cocktail tomatoes, halved
  • fresh thyme
  • 12–16 shavings Prosciutto
  • fresh wild rocket
  • 1 red onion, thinly sliced

Preheat the oven to 200 °C.

Place 4 wraps on pizza plates and scatter with some grated mozzarella. Top each with a wrap. The cheese sandwiches the two wraps together to form a yummy, steady base. Spread some of the chopped tomatoes on the 4 sandwiched bases, top with more cheese, cocktail tomatoes and thyme. Bake in a hot oven for about 8–10 minutes.

When the pizzas come out of the oven, top with fresh rocket, slices of onion and Prosciutto and serve immediately!
