Duck with Granadilla Basting

1 duck, about 2.2 kg

2 Tbsp (30 ml) olive oil

1 tsp (5 ml) Maldon salt

1 can (115 g) granadilla pulp

Preheat the oven to 200 °C.

Trim all excess fat off the duck and massage the oil gently into the skin. Sprinkle with Maldon salt. Place the duck on a drip tray inside a roasting tray and place in the oven. Cook for an hour then baste with the granadilla pulp every 15 minutes for another hour until golden brown and crispy.

Serve with roasted sweet potatoes.
