  • 2/3 C (150 g) castor sugar
  • 2 eggs
  • zest of 1 orange
  • 1/3 C (80 g) butter
  • 100 g dark chocolate, broken into pieces
  • ¼ C (60 ml) cake flour
  • ¼ C (60 ml) cocoa powder
  • 100 g white chocolate, broken into pieces
  • 50 g almonds, toasted
  • icing sugar, for dusting

 

Preheat the oven to 180 °C. Grease a baking tray.

Beat together the castor sugar, eggs and orange zest until creamy and pale in colour. Melt the butter and the dark chocolate together and whisk it into the creamy egg mixture. Sift the flour and cocoa and gently fold into the chocolate mixture, adding the white chocolate and almonds. Pour into the baking tray and bake for 25–30 minutes or until just set. Do not overbake. The brownies should still be slightly soft in the centre. Remove from the oven and allow to cool before cutting into squares and dusting with icing sugar.
