Devilishly Good Red Velvet Hot Chocolate with Whipped Cream Cheese Topping
Colourful and delicious, red velvet hot chocolate will definitely cheer you up in the winter.

1⁄2 C (125 ml) double cream
2 Tbsp (30 ml) sugar
2 Tbsp (30 ml) cream cheese, softened
seeds of ½ vanilla pod
2 1⁄2 C (625 ml) full-cream milk
100 g good quality dark chocolate, chopped
4 – 5 drops red food coloring
Start by making the whipped cream cheese topping- blend the double cream, cream cheese, sugar and vanilla seeds with an electric mixer until it thickens.
Place a small saucepan over a medium heat, add the milk and heat slowly until warmed through. Add the chocolate and stir until melted and incorporated. Add a couple of drops of food coloring to give it a rich red colour.
Pour into mugs, top with a generous blob of whipped cream cheese topping and serve immediately.
