
Delicious Guacamole

Ingredients
2 ripe organic avocados
¼ red pepper, diced
¼ yellow pepper, diced
½ red chilli, finely chopped
1 tsp (5 ml) garlic, crushed
1 tomato, chopped
zest and juice of 1 lemon
1 Tbsp (15 ml) extra virgin olive oil
1 Tbsp (15 ml) chia seeds
125 ml (½ cup) roughly chopped parsley
salt an milled black pepper
Method
Remove the pips from the avocados, scoop the flesh out of the skins, place in a bowl and mash with a fork.
In a separate bowl, mix all of the remaining ingredients together and then fold the avocado mash into this mixture.
Season to taste. Store in the fridge, in a glass jar with a drizzle of olive oil on top to seal for up to 5 days. Serve atop crusty bread or these gluten-free seed crackers.
