  • 400 g 70%-cocoa best quality chocolate
  • 400 g butter
  • 5 eggs, separated
  • 200 g caster sugar

 

Preheat the oven to 150 °C. Line the bottom of a 20 cm springform baking tin with baking paper.

Melt the chocolate and butter in a glass bowl over hot water. (Note: It can be done in the microwave, but you have to leave everything else and watch this process! Melt on a low setting, and open up every 30 seconds or so to give a shake or a stir …)

Beat eggs yolks and caster sugar together until light and creamy. Add the chocolate mixture slowly. Beat egg whites until stiff and gently fold into mixture.

Pour the mixture into the prepared tin and bake for 1 hour, then switch off the heat and leave the tart in the oven for another 20 minutes. Remove, and allow to cool.

This tart really does not need a blob of cream, or anything else, to make it perfect!
