Crispy Plum Basted Chicken Wings
The perfect combination of the sweetness, umami and citrus flavour makes for the perfect basting for these chicken wings.

For the Crispy Chicken Wings
½ C (125 ml) plum sauce
1 small knob ginger, grated
2 Tbsp (30 ml) ketcap manis (Indonesian Soy sauce)
2 garlic cloves, peeled and minced
1 lemon, zest and juice
2 Tbsp (30 ml) Natura Dark Muscovado Sugar
8 chicken wings
1 lemon cut into wedges, to serve.
To Make the Crispy Chicken Wings
Place the plum sauce, ginger, ketcap manis, garlic, lemon zest and juice and Natura Dark Muscovado Sugar into a mixing bowl and mix well.
Take out a third of the sauce and reserve for dipping sauce.
Place the chicken wings into the remainder of the marinade making sure that they are evenly coated. Cover and place in the fridge for 1 hour.
Prepare a fire and braai the wings over hot coals for 10-15 minutes, turning regularly to ensure that they don’t burn. Serve with a squeeze of fresh lemon and the reserved marinade as a dipping sauce.
