Crispy Chicken Nuggets served with a Baby Gem Salad
A simple, tasty dish that is great for those days where time is of the essence.

2 Tbsp (30 ml) flour, for dusting
1 egg, lightly beaten
100 g breadcrumbs
1 chicken breast fillet, sliced into thin strips
Salt and pepper
Oil for frying
1 baby gem lettuce, quartered
Salad dressing of your choice
2 Tbsp (30 ml) dipping sauce of your choice (mayonnaise, peri-peri mayonnaise or sweet chilli sauce)
Place the flour, beaten egg and breadcrumbs onto 3 separate plates.
Season the chicken strips with salt and pepper and dust lightly with the flour.
Dip the dusted chicken strips into the egg followed by the breadcrumbs until well covered.
Heat a pan with a little oil and shallow-fry the chicken for a few minutes on each side or until golden brown and crisp.
Remove the nuggets from the pan, season again with salt and pepper and allow to drain on some paper towel.
Serve with the baby gem lettuce wedges dressed with a little salad dressing, and your choice of dipping sauce.
