Creamy Tomato and Rocket Linguini

  • 250 g linguini
  • 1 Tbsp (15 ml) olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 1 x 410 g tin baby cherry tomatoes or whole tomatoes
  • 1 tsp (5 ml) sugar
  • sea salt and freshly ground black pepper
  • ½ C (125 ml) reduced-fat cream
  • 2 C (500 ml) fresh rocket
  • grated Parmesan cheese for serving

Bring a pot of salted water to the boil and cook the pasta until al dente.

Heat the oil in a large saucepan and sauté the onion and garlic until soft and caramelized. Add the tomatoes and sugar and simmer, uncovered, for 10 minutes. Season to taste with sea salt and freshly ground black pepper. Add the cream and heat through for 1 minute.

Drain the cooked pasta and toss through the creamy tomato sauce. Add the rocket and mix until well wilted and combined. Check seasoning once more.

Serve with grated Parmesan.
