Creamy Courgette & Yoghurt Mash
This creamy courgette version of mash will leave you wanting more and is a great replacement for the well-loved starchy potatoes.

400 g courgettes, sliced
¼ C (60 ml) cream
1 tsp (5 ml) garlic, crushed
2 Tbsp (30 ml) cream cheese
150 g (1 tub) Fairview Full Fat Yoghurt
100 g feta, crumbled
micro herbs, to serve
Bring a pot of salted water to the boil. Add the courgette slices and blanch for 1 minute. Strain and refresh under cold water.
Heat the cream and garlic in a saucepan. Add the blanched courgettes, cover with a lid and cook for 5-6 minutes until tender. Place in a food processor with the cream cheese and blend until coarse. Stir in the Fairview Full Fat Yoghurt and feta and season to taste. Scatter with the micro herbs and serve warm.
Tip: This mash is so versatile and goes well with all red meats, chicken, pork and even fish.
