Creamy Cheese and Ham French Toast

1 x 250 g tub cream cheese
1 Tbsp (15 ml) Dijon mustard
4 slices gypsy ham, finely chopped
½ C (125 ml) grated Gruyère cheese
1 spring onion, finely chopped
small handful of chives, chopped
salt and pepper to taste

1 large ciabatta, cut into 12 even slices
6 eggs
3 Tbsp (45 ml) chopped chives
salt and pepper to taste
1 tsp (5 ml) butter
1 Tbsp (15 ml) cooking oil
wild rocket, for garnishing

Mix the filling ingredients together until well combined and season to taste. Generously spread the filling onto 6 slices of ciabatta and top with the remaining slices. Squash them together a bit so that they stay intact.

Beat the eggs and chives together and season. Add the butter and oil to the pan and heat until bubbling. Dip 2–3 sandwiches into the egg mixture, allowing them to absorb as much egg as possible and fry over moderate heat until golden on each side, about 45 seconds per side. The filling will begin to ooze out a little. Remove and place onto a paper towel and repeat with the remaining sandwiches. Keep the sandwiches warm by placing in a warmer drawer or in the oven at a low temperature.

Serve immediately and garnish with fresh rocket leaves.
