The combination of coffee and spices on salmon is a surprisingly delicious partnership.

550 g–650 g salmon fillet

4 – 6 small flour tortillas/tacos

Coffee spice rub:

2 Tbsp (30 ml) brown sugar

2 tsp (10 ml) ground coffee

1 tsp (5 ml) whole black peppercorns

½ tsp (2.5 ml) ground cumin

½ tsp (2.5 ml) chilli powder

¾ tsp (3.75 ml) salt

Place all the rub ingredients in a spice grinder and pulse until it turns into a fine powder.

Be careful not to inhale it when you open the lid.

Coat both sides of the salmon fillet with the rub, place on a lined baking tray and cook under a hot grill for about 10–15 minutes until the flesh is just cooked through and flakes when you pull it apart. The timing is completely dependent on the thickness of the fish – watch it closely to prevent overcooking and drying out.

Lightly grill the flour tortillas or tacos until they just start to brown (or microwave them for 10 seconds on high).

Serve the salmon wrapped in flour tacos or tortillas, with a simple salsa of chopped tomatoes, red onion and finely chopped pickled jalapeño chillies. Garnish with thinly shaved cabbage for crunch, fresh lime wedges and coriander for freshness.
