Start the day with a crunch with this coconut and nut based granola and goji berries

3 C (750 ml) coconut shavings
1 C (250ml) flaked almonds
1 C (250ml) crushed walnuts
2 tsp (10 ml) chia seeds
3 Tbsp (45 ml) coconut oil, melted
1/2 C (125 ml) goji berries

To Serve
assorted fresh berries, raspberries, blackberries, strawberries
fresh, double cream yoghurt
real maple syrup

Preheat oven to 100 ºC.

Mix all of the ingredients, except the goji berries, together and then place on an oven roasting tray.

Mix well to ensure that the coconut oil coats the ingredients.

Place in the oven for 10-15 minutes or until the coconut shavings starts to colour.

Remove, chill and then add the goji berries.

Serve with a dollop of yoghurt, fresh berries and drizzle with maple syrup.
