Chunky Minestrone Soup with Beans

5 bacon rashers, roughly chopped

2 carrots, roughly chopped

2 stalks celery, roughly chopped

2 medium potatoes, roughly chopped

1 onion, roughly chopped

3 cloves garlic, diced

1.5 litres good-quality chicken stock

1 x 420 g can beans, drained and rinsed

2 x 420 g cans chopped Italian tomatoes

120 g pasta (any small variant will do)

salt and freshly milled black pepper, to taste

½ C (125 ml) olive oil

¼ C (60 ml) chopped fresh flat-leaf parsley

freshly grated Parmesan cheese, to serve

Place the bacon, vegetables and garlic in a large pot and stir to combine. Cook over high heat for about 5 minutes, stirring occasionally. Add the stock, beans and tomatoes and cover. Bring to the boil then reduce the heat to medium-low, cover and simmer for about 30 minutes until the vegetables are tender. Increase the heat and add the pasta. Cook for about 10 minutes until al dente, stirring occasionally to ensure that the pasta does not stick. Season to taste.

Serve the minestrone drizzled with the oil and sprinkled with the parsley and Parmesan cheese.
