Chilli Con Carne
This recipe is delicious and very easy to make.

400 ml olive oil
50 g ground paprika
40 g ground chilli powder
50 g ground coriander
80 g ground cumin
50 g cayenne pepper
4 red dried red chillies
3 bay leaves
2 kg lean topside mince
250 g white onion, diced
30 g garlic, chopped
1 kg (roughly 2 and a half tins) whole peeled tinned tomatoes, blended until smooth
100 g small green pepper, diced
100 g small red pepper, diced
500 g cooked red kidney beans, drained
500 g cooked black beans, drained
500 g pinto beans, drained
40 g fresh coriander, chopped
2/5 C (100 ml) lemon juice
salt and pepper to taste
tortillas, guacamole and salsa, to serve
In a large saucepan bring the oil to a medium heat, add the spices and gently fry for 10 minutes. When the spices are cooked, add the mince, then reduce the heat and gently simmer for 20 minutes. When the mince has taken on the flavours of the spices, add the onion and allow to cook for 10 minutes.
Add the garlic and cook for a further 10 minutes.
Add the tomatoes and peppers and simmer for 15 minutes.
Add the beans and simmer for 10 minutes.
Finish with the fresh coriander, lemon juice and season to taste.
Serve with grilled tortillas, guacamole and salsa.
