‘Chicken’ Stack Topped with Tzatziki & Chickpea Salad
This recipe is a great healthy and light meal.

1 box Quorn Southern Style Chicken Burgers (4 patties)
1 x 400 g tin chickpeas, rinsed and well drained
100 g Danish-style feta, diced into 1-cm cubes
½ small red onion, finely chopped (optional)
1 small Mediterranean cucumber or ½ an English cucumber, seeds removed and diced
8 marinated sun-dried tomatoes, diced
3 Tbsp (45 ml) chopped fresh parsley
zest and juice of 1 lemon
1 Tbsp (15 ml) olive oil
salt and pepper to taste
125 g ready-made tzatziki, to serve
Bake the chicken burgers according to the instructions on the box.
Mix all the salad ingredients together.
Top the freshly baked burgers with the chickpea salad and serve with a generous dollop of tzatziki.
Serve immediately, hot.
