Charred Broccoli and Baby Gem Salad
A good harvest table needs greens and that's where this salad shines. It's best if the greens get good char on them, so use a griddle pan if you can.

4 garlic cloves (drizzled with a little olive oil)
¼ C (60 ml) lemon juice
½ tsp (2,5 ml) lemon zest
1 chilli, chopped
3 baby gem lettuces
250 g tenderstem broccoli
salt and pepper as needed
Place 4 garlic cloves in foil and drizzle with a little olive oil and salt and roast close to a fire until soft, alternatively place into a hot oven (200 ºC) to roast. When soft, remove and mash roughly, combine with salt pepper, lemon and olive oil.
Dress the leaves and the tenderstem broccoli separately with the olive oil and garlic mix. Wilt the leaves and the broccoli separately over open fire or in a hot pan.
Once the leaves and broccoli are nicely charred, combine and serve.
