Cappuccino Chocolate Chunk Muffins
Our two favourite things in muffin form - serve with coffee for maximum enjoyment.

2 C (500 ml) cake flour
1 Tbsp (15 ml) baking powder
½ tsp (2,5 ml) salt
1 C (250 ml) milk
¼ C (60 ml) espresso instant coffee
½ C (125 ml) Wooden Spoon Yellow Margarine
1 tsp (5 ml) vanilla essence
1 large egg
150 g dark chocolate, cut into chunks
Preheat the oven to 180 ºC and grease a muffin tray with a little margarine.
In a large mixing bowl add the cake flour, brown sugar, baking powder and salt and mix well to combine.
In another bowl add the milk and coffee and stir well to combine. Pour in the melted margarine and mix then add the vanilla and egg and mix well to combine.
Add the wet ingredients to the dry, then add most of the chocolate but save some for the tops of the muffins.
Mix to combine until there is no dry flour but do not over mix. Spoon the mixture into the greased muffin tray until they are ¾ full. Pop some chocolate on the tops, then bake for 20 minutes. A skewer inserted into the centre should come out clean when they are ready (you may see melted choc on the skewer and that’s fine).
