Caesar Salad with Homemade Croutons
Nothing beats a caesar salad and this one is nothing less than delicious!

Ingredients
4 slices crusty bread, cut into small cubes
2 Tbsp (30 ml) olive oil
salt and freshly milled black pepper
2 egg yolks
1 clove garlic, crushed
4 anchovies
lemon juice
1 C (250 ml) avocado oil (use sunflower or olive oil, if preferred)
30 g Parmesan cheese, grated, plus extra shavings for serving
2 cos lettuce, washed and shredded
Method
Preheat the oven to 180 °C.
Place the bread cubes onto a roasting tray and drizzle with the olive oil. Season with salt and pepper and roast in the oven for 10 minutes or until golden brown and toasted. Remove from the oven and keep to one side.
Place the egg yolks, garlic, anchovies and a squeeze of lemon juice into a food processor and whizz for a few seconds to combine all the ingredients. Slowly pour the oil into the egg yolk mixture while blending, until a thick mayonnaise is formed. Add the Parmesan and season with salt and pepper.
Place the cos lettuce into a large glass bowl and add the dressing. Toss to coat.
Arrange the lettuce neatly onto a platter and top with the freshly baked croutons and Parmesan shavings.
