Buttermilk Crumpets with Crispy Bacon & Maple Syrup

240 g cake flour
1 tsp (5 ml) baking powder
60 g castor sugar
pinch of salt
2 eggs, separated
1½ cups (375 ml) buttermilk
2 Tbsp (30 ml) vegetable oil
butter for frying
1 pkt (250 g) streaky bacon, fried until crispy
maple syrup for serving
Place flour, baking powder, sugar and salt into a bowl and mix until just combined.
Whisk the egg yolks, buttermilk and oil together in a separate bowl, and then stir the mixture into the dry ingredients.
Whisk the egg whites until stiff peaks form and gently fold into the batter.
Heat a little butter in a non-stick frying pan and fry tablespoonfuls of batter for about 2 minutes on each side or until light golden brown and the crumpets are cooked. Remove from the pan and serve immediately with crispy bacon and maple syrup.
