Butter-fried Radish and Fillet Salad
This warm salad is hearty and filling while still low carb. Fried radishes are so tasty and almost resemble the flavour of baby potatoes.

Ingredients
Roasted Garlic and Sour Cream Dressing
(makes 1 C)
2 (150 g) heads of garlic
1 tsp (5 ml) olive oil
1 C (250 ml) sour cream
1 tsp (5 ml) Dijon mustard
1 tsp (5 ml) chives, finely chopped
pinch cayenne pepper
salt and pepper
Butter-fried Radish and Fillet Salad
1 Tbsp (15 ml) olive oil
800 g fillet steak
salt and pepper
olive oil for frying
3 Tbsp (45 ml) butter
450 g radishes, halved
1 Tbsp (15 ml) rosemary, chopped
150 g feta, diced
100 g almonds, toasted
40 g watercress
Method
Roasted Garlic and Sour Cream Dressing
Preheat the oven to 200 °C.
Place the garlic heads onto a piece of foil. Drizzle with oil and wrap up tightly in the foil. Roast for 30 minutes. Allow the garlic to cool for 10 minutes before cutting the heads in half and squeezing out the tender flesh.
Add the flesh to a food processor together with the rest of the ingredients. Purée until smooth and season to taste. Thin with a little water if necessary.
Butter-fried Radish and Fillet Salad
Preheat the oven to 180 °C.
Heat a heavy-based saucepan over high heat. Rub the oil into the fillet and season with salt and pepper. Add a splash of oil to the pan. Brown the meat for 2-3 minutes on each side. Place in the oven for 15 minutes for medium rare, or longer if you prefer the steak to be well cooked. Alternatively, braai quickly over medium- hot coals on a braai to sear and seal. Remove from the heat and allow to rest. Slice into thin slices.
Heat a heavy-based saucepan over medium heat. Add the butter. Once it starts to sizzle, add the radishes and rosemary and fry for 5 minutes until browned. Season to taste.
To serve the salad, place the warm radishes onto a large platter. Add the meat slices. Drizzle with dressing. Scatter the feta, almonds and watercress on top and serve.
TIP: The fillet can easily be replaced with chargrilled steak strips, shredded chicken breasts or even poached eggs. Butter-fried radishes make for a great veggie accompaniment to any main meal.
