Avocado Oil Mayonnaise
1 egg
1 Tbsp (15 ml) lemon juice
½ tsp (2.5 ml) mustard
1 clove garlic, crushed
salt and freshly ground black pepper
¾ C (180 ml) Westfalia Lemon Avocado Oil

1 head of broccoli, grated
3 soft dates, thinly sliced
½ red onion, thinly sliced
70 g flaked almonds, toasted
2 small savoy cabbages, thinly sliced
1 avocado, peeled, pitted and chopped
2 Tbsp (30 ml) lime juice
salt and freshly ground pepper

Avocado Oil Mayonnaise
Place the egg, lemon juice, mustard, garlic, salt and pepper in the bowl of a blender and whizz together for 1 minute. Slowly add the Westfalia Lemon Avocado Oil in a steady stream until the mayonnaise has emulsified.

Grate the broccoli into a bowl and combine with the rest of the ingredients. Add the mayonnaise to the broccoli mixture and stir to combine. Adjust the seasoning. Serve with a drizzle of Westfalia Lemon Avocado Oil and a wedge of lime.
