Broccoli, Apple & Walnut Salad with Candied Bacon Bits


A fresh take on salad served with a zingy honey-mustard yoghurt dressing.

Candied Bacon
250 g good quality streaky bacon
juice of 1 orange
2 Tbsp (30 ml) honey

1/3 C (80 ml) plain yoghurt
2 Tbsp (30 ml) creamy mayo
2 Tbsp (30 ml) apple cider vinegar
zest and juice of 1 small lemon
2 Tbsp (30 ml) extra virgin olive oil
2 Tbsp (30 ml) wholegrain mustard
2 tsp (10 ml) honey
freshly ground salt and pepper to taste

1 medium broccoli, broken into florets and thinly sliced
2 Pink Lady apples, thinly sliced
2 sticks celery, thinly sliced wedges
50 g walnuts, roughly chopped

Candied Bacon
In a large frying pan, fry the bacon until golden and crispy. Remove from the pan. Carefully add the orange juice and honey and mix vigorously. Add the bacon back into the pan and simmer until the liquid is reduced and sticky – ensuring that all the bacon is well coated. Remove and allow to cool, and then break into bite size pieces.

Combine all the dressing ingredients together and season to taste.

Place the broccoli, apple, celery and walnuts in a large bowl and mix with the dressing until evenly combined. Season to taste.
Serve in a salad bowl or arrange on a platter and sprinkle with bacon bits.

Tip: Add dried cranberries for extra sweetness – so yum
