Broccoli Soup

1 Tbsp (15 ml) butter
2 Tbsp (30 ml) olive oil, plus extra for serving
1 onion, peeled and finely chopped
1 potato, peeled and chopped into small cubes
4 C (1 litre) home-made chicken stock
500 g broccoli, broken into florets
½ C (125 ml) crème fraîche, plus extra for serving
coarse sea salt and freshly milled black pepper

For Serving

Parmesan cheese shavings, for serving

Heat the butter and olive oil in a pot and slowly fry the onion. Add the chopped potato and cook for a further 5 minutes, stirring all the time. Add the chicken stock. Cook until the potato is tender and then add the broccoli. Cook for a further 7 minutes. Liquidise the soup and then strain it through a sieve.

Add the crème fraîche and adjust seasoning if necessary.

Serve with an extra dollop of crème fraîche, a drizzle of olive oil and some Parmesan shavings.
