Brioche Tartines with Whipped Cheese & Plum Jam
Crisp brioche toasts topped with a delicate whipped blue cheese topping, complemented by the sweetness of plum jam and the crunch of chopped walnuts.

Ingredients
Plum Jam
½ C (125 ml) sugar
½ tsp (2.5 ml) ground cinnamon
6 plums, pitted and cubed
Whipped Cheese
150 g blue cheese
⅓ C (80 ml) cream
Tartines
1 large loaf of brioche bread, sliced, (or use Kitka as an alternative)
To Serve
2 fresh plums, thinly sliced
small handful pea shoots or microgreens
edible flowers (optional)
black pepper
Method
Plum Jam
In a saucepan over medium heat, combine the sugar, apple cider vinegar, and ground cinnamon. Stir occasionally until the sugar dissolves, then bring the mixture to a boil. Add the cubed plums and simmer for 10-15 minutes, or until the mixture reaches a jam-like consistency.
Whipped Cheese
In a blender, combine the blue cheese, cream cheese, and heavy cream. Blend until just combined. Cover and set aside.
Tartines
Spread softened butter on both sides of the brioche bread slices. Heat a nonstick frying pan and toast the slices until golden brown on both sides.
To Serve
Dollop a generous amount of whipped cheese onto each toasted slice. Add a drizzle of plum jam and then artfully add 3-4 slices of fresh plum on top. Garnish with toasted walnuts, pea shoots/micro herbs and edible flowers, if using. Season with a crack of black pepper and serve immediately to enjoy the flavours at their best.
