Nothing says ‘weekend’ more than the smell of boerie on the grill. Pick one or all of these recipes for a twist on the traditional boerie.

Chaka-lekker Chipotle Boerie

a splash of olive oil for frying

1 Tbsp (15 ml) curry masala

1 large onion, chopped

½ C (125 ml) red cabbage, shredded

½ C (125 ml) green cabbage, shredded

¼ C (60 ml) red pepper, chopped

¼ C (60 ml) yellow pepper, chopped

¼ C (60 ml) green pepper, chopped

1 large carrot, grated

3 chipotle chillies (if you can’t find them, any chilli will do)

1 tin (410 g) baked beans

4 rolls (we used pretzel rolls)

500 g thick boerewors

Fig & Blue Cheese Boerie

a generous glug of oil for shallow frying onions

1 C (250 ml) flour

2 Tbsp (30 ml) paprika

1 large onion sliced into rounds

5 preserved figs, thinly sliced

100 g blue cheese, crumbled

1 handful of watercress leaves

4 rolls (we used pretzel rolls)

500 g thick boerewors

salt and pepper to taste

Bacon & Banana Boerie

a splash of oil for frying onions

2 large onions, sliced

1 Tbsp (15 ml) sugar

1 C (250 ml) lager

250 g packet of streaky bacon   

a generous glug of olive oil for shallow frying the bananas

4 medium-size bananas, sliced at an angle into ovals

500 g thick boerewors

1 handful of rocket leaves

4 rolls (we used pretzel rolls)

salt and pepper to taste

Chaka-lekker Chipotle Boerie

Heat the olive oil in a medium-sized frying pan and fry the onions until golden. Add the masala and fry for a minute to cook out the spices. Throw in the rest of the vegetables and fry until they are cooked, but still retain some crunch. Add the tin of baked beans and simmer for 5 minutes to combine all the flavours. Braai the wors to your liking, then remove from the fire and begin assembly of the boerie rolls.

Slice the rolls lengthways, add a generous slice of wors to each, pile with Chaka-lekker sauce and enjoy!

Fig & Blue Cheese Boerie

Heat the oil in a large saucepan over a high heat. Mix the flour and paprika together and dredge the onions in the mixture. Fry the coated onions until golden, then remove and drain on a piece of kitchen towel. Braai the wors to your liking, then remove from the fire and begin assembly of the boerie rolls.

Slice the rolls lengthways, add a generous slice of wors to each, top with crumbled blue cheese, sliced figs and fried onions. Season with salt and pepper, top with watercress leaves and serve.

Note: if you plan to do all your cooking on the braai, just take care when working with oil and an open flame.

Bacon & Banana Boerie

Add a splash of olive oil to a medium-sized frying pan and fry the onions slowly. When they are slightly golden, add the sugar and fry until the onions caramelise. Add the lager and let it simmer until it cooks out completely. You should be left with awesome, sticky onions. Season to taste and set aside.

Grill, fry or braai the bacon to get it nice and crispy, then set aside. Heat the oil for the bananas in a medium-sized frying pan, and fry the bananas until golden. Remove and drain on a sheet of kitchen towel.

Braai the wors to your liking, then remove from the fire and begin assembly of the boerie rolls. Start with the bacon and banana, top with a generous length of wors and top with more banana, bacon and fresh rocket.

Note: if you plan to do all your cooking on the braai, just take care when working with oil and an open flame.
